The Merrow came for a reservation system. The website followed.

A quote in excess of $5,000 a year for taking reservations

The Merrow opened in 2023, founded by three friends who built one of the West End's favorite cocktail bars. The drinks were never the problem. The systems around them were.

Reservations meant a phone call

Booking a table meant calling during service or sending a message and waiting. OpenTable's solution came with a price tag in excess of $5,000 a year, for a neighborhood bar that didn't need a national platform. And that was on top of what they were already paying to host the old site and the outside company maintaining it.

The website couldn't keep up

The existing Wix site didn't do the place justice, and Wix's closed platform made integrating a custom reservation system nearly impossible. Worse: the site was configured in a way that told Google not to index it at all. One of Long Beach's best bars was invisible to search.

One fix kept revealing the next

This is the domino effect we see constantly: the reservation problem exposed the website problem, which exposed the visibility problem. Fixing one without the others would have left money on the table. So we fixed the chain, not the link.

Custom reservations

A two-step booking flow on the homepage: date, time, party size, done. Guests get an email confirmation when the booking is approved, the house keeps control of the floor, and the policies (hold times, large parties, 25-and-over) are stated in plain text.

Online bookings at less than half of OpenTable's monthly price, with no per-cover fees.

A full site rebuild

Fast, modern, and built to be read: real HTML menus instead of PDFs, an accurate hours table with happy hour and brunch, private events, takeout, and the story of the bar, all on accounts The Merrow owns.

The site finally matches the room. And Google can finally read both.

Search visibility, switched on

The old site told search engines to ignore it. The new one is written so Google and AI assistants can actually quote it: dishes, cocktails, hours, and location, all in plain text machines can read when someone asks where to drink in Long Beach.

From invisible to quotable, which is where hospitality discovery is heading.

Why it matters

Platforms charge rent. Systems pay for themselves.

The quote wasn't wrong, it was just built for a different business. A neighborhood bar doesn't need a national marketplace. It needs its own front door: a fast site, a booking flow, and ownership of both. That's the difference between renting your reservations and owning them, and it's the same pattern whether you run a bar, a clinic, or a contracting crew.
